Description

A fresh, zesty green sauce made with cilantro instead of parsley. Perfect for drizzling over grilled vegetables, tofu, rice bowls, or tacos. It's raw, quick to make, and packed with flavor.

Instructions

  1. Rinse and roughly chop the cilantro (stems are fine).
  2. Add cilantro, garlic, vinegar/lemon, and chili (if using) to a food processor. Pulse until chopped.
  3. Slowly pour in olive oil while blending to desired texture (chunky or smooth).
  4. Season with salt and optional onion/shallot. Let sit for 10 minutes for flavors to meld.

Note: Servings: ~3-4 cup (serves 4-6 as a sauce). Nutrition per Serving is for 2 tablespoons.
