Baked Jackfruit Fiber Fries are a crunchy, delicious, and addictive snack made from the fibers of ripe jackfruit. It’s one of the best recipes for using parts of the fruit that are often discarded.

Instructions

  1. Clean the jackfruit fibers: Remove the tough part that was attached to the fruit and discard it.
  2. Cut the fibers into thin strips.
  3. Mix dry ingredients: In a bowl, combine the jackfruit fibers with rice flour, chili powder, and salt. Mix well and let rest for 10 minutes.
  4. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  5. Check texture: After 10 minutes, the jackfruit fibers will have released some moisture, helping the flour stick to them.
  6. Arrange on tray: Spread the fibers on the tray and bake for 15 minutes, stirring halfway through.
  7. Add oil: Drizzle the fibers with oil and mix well so they're evenly coated. (This step is optional but adds a nice crunch.)
  8. Bake again: Bake for an additional 5–10 minutes until golden and crispy. (Be careful not to overcook them—slightly browned edges will enhance flavor and texture.)

Notes

  • Baking time may vary depending on how thick the strips are and your oven’s temperature.
  • You can also fry the fibers instead of baking for a crispier texture.
