Description
A refreshing chilled tomato-based soup from Andalusia, gazpacho is packed with ripe summer vegetables and bold Mediterranean flavor. It’s the perfect no-cook dish for hot days and makes excellent use of peak-season tomatoes.
Instructions
- Roughly chop the tomatoes, cucumber, bell pepper, onion, and garlic.
- Blend all vegetables in a high-speed blender until smooth.
- Add olive oil, vinegar, salt, and pepper, then blend again until well combined and silky.
- Taste and adjust seasoning. Optionally strain for a smoother texture.
- Chill in the fridge for at least 1 hour before serving.
- Serve cold, garnished with croutons and finely chopped fresh veggies or herbs.
