Description
A quick and flavorful stir-fry dish that balances the heat of fresh ginger with the sweetness of soy and syrupy glaze. Crispy tofu and wilted pak choi make this a comforting plant-based dinner with lots of crunch and nutrition.
Instructions
- Toss tofu cubes in cornflour until evenly coated.
- Heat oil in a large non-stick frying pan or wok. Fry tofu until golden and crispy on all sides, then set aside.
- In the same pan, add ginger, soy sauce, and maple syrup. Let it bubble for 1–2 minutes.
- Add pak choi and cook until just wilted, then return the tofu to the pan and toss everything to coat in the sauce.
- Serve hot, topped with spring onions and rice or noodles if desired.
